Pound both sides of the steak with a meat mallet.

Marinate eggs, soy sauce, dark soy sauce, rice wine and a small amount of salt for half an hour.

Spread a thin layer of starch on both sides of the steak.

Prepare the oil pan. When the oil temperature is 50% to 60%, adjust the heat to medium, gently add the ribs, fry until both sides of the ribs are slightly golden, remove and drain.

Add a small amount of oil to the pot, add rock sugar, secret braised sauce, star anise, cloves, Sichuan peppercorns, dark soy sauce, rice wine and a small amount of water. After mixing evenly, add the ribs one by one so that the ribs are evenly coated with the soup.
