Homemade bacon
Overview
Don’t people here eat bacon? I have visited many places, supermarkets and markets, and there is not even packaged bacon. Well, I can make it myself and have enough food and clothing. I bought my own meat and made bacon by trying to remember my grandma’s method of making bacon, and made some improvements.

Cut the meat into pieces, wash and drain. I don’t like fatty meat, so buy leaner meat

Prepare spices: bay leaves, star anise, fennel, ginger, cinnamon, white coriander, nutmeg, coriander

Crush the spices slightly, add Sichuan peppercorns, and soak in white wine

Drain the meat, apply a layer of sugar evenly, and then sprinkle with salt, put the skin on the bottom, cover the container and marinate

Marinate the meat for about 48 hours, turning the meat during this time to allow the flavors to absorb evenly

Mix spiced wine and soy sauce into marinade

After marinating, take it out to dry

Dry it outside during the day and bring it inside at night to avoid dew getting stuck on it
