Winter Melon, Corn and Lean Meat Soup
Overview
It’s hot in summer and many people don’t have the appetite to eat. This soup is what my family makes most often. It’s convenient and simple. Sometimes it’s paired with fried rice noodles or fried noodles. It’s such a simple meal, and the kids love it very much!

First, dice the corn, winter melon, and mushrooms, and mince the lean meat

Marinate the minced lean meat with cornstarch, salt and oil for a while

Divide the corn flour into 2 parts, add water to the other part using a food processor or juicer to make corn juice

Heat the pan and add a little oil, fry the winter melon kernels, remaining corn kernels, and shiitake mushroom kernels for a while

Put the corn juice and fried things in the pot and bring to a boil

Cook for about 15 minutes, put the lean meat into the pot together, and add the eggs

Finally, make a thick soup. You can add water with water chestnut powder. If you don’t have cornstarch, you can add it slowly into the soup

It’s ready after boiling. You can add some chopped green onions. My kids don’t eat green onions, so I didn’t add them
