Soak white fungus, wash away impurities, tear into small pieces and put in a casserole

After 3 hours, half of the water is left in the pot. Add the prepared red dates, longan, and rock sugar, and continue to simmer for 1 hour. Use a spoon to stir frequently during the last 1 hour (the white fungus soup is thicker at this time and can easily stick to the pot)

Turn off the heat and serve. The thick white fungus soup can be pulled out into strands when scooped out with a spoon
