Cream Puffs
Overview
Very good puffs. I came back in time to bake them after lunch with my friends. They are very good and delicious. Puffs are a Western-style dessert originating from Italy. The fluffy dough is filled with cream, ice cream or chocolate. The puffs taste hot on the outside and cold on the inside, crispy on the outside and smooth on the inside, with an excellent taste. Especially when eaten hot, it is very delicious, crunchy, full and mellow. I took 11 of them with me when I picked up my little friend. I was originally going to let him share some with his good friend, but I didn’t expect that he ate them all before his good friend came down. So my little friend ate 11 puffs of this size in one go. Put milk + salt + softened butter cubes in a pot, bring to a complete boil and then turn off the heat.

Sift in 60 grams of low-gluten flour.

Use a wooden spoon to mix evenly into the dough.

Turn the heat back to medium, stirring constantly, until a thin film of batter appears on the bottom of the pan, then turn off the heat.

Take it out and put it into a mixing bowl, cool it down to a temperature that is hot but not scalding, and pour in the whole egg liquid in 4 batches

The mixed batter should be shiny and smooth, and it will take on the shape of an inverted triangle when scooped up and dropped.

Put the batter into a piping bag, line a baking sheet with parchment paper, and pipe out 4 cm diameter puff batter.

Preheat the oven and bake at 190-200 degrees for 25 minutes, until the surface of the puffs is golden brown and puffed up. Turn off the heat and continue to simmer for 5 minutes, then remove and let cool.

Beat the light cream and sugar with ice water. Put the buttercream into a piping bag.

Cut the puff across the middle and pipe in the cream or squeeze the cream from the bottom of the puff.
