Peel and slice lotus root, stir-fry in boiling water until thoroughly cooked. Mix 1 spoon of dark soy sauce (or 2-3 spoons of steamed fish soy sauce), 2 spoons of white vinegar, salt, sugar, chicken essence, and spicy sauce (or Laoganma black bean sauce) to make a sauce.

Heat oil and stir-fry chopped green onion until fragrant, add lotus root slices and stir-fry with seasoning sauce.

Add starch water and stir-fry, add chopped green onion to reduce the juice! Plate it!
