Honey liquid toast
Overview
This toast is based on honey toast, adding some liquid fermented with rice wine, thereby reducing the amount of yeast powder. The liquid made from rice wine takes a long time to ferment, which also makes the aroma of the flour more prominent. Also, instead of using sugar, honey is used, making this toast healthier.

First mix rice wine and 80 grams of bread flour to form a paste, then ferment at low temperature for about 15 hours. The batter will be in the state shown in the picture, with many bubbles and the volume will increase by more than 2 times. The liquid is fermented.

Pour the liquid into the bread bucket, add milk powder, water and salt

Put all the remaining bread flour, put the yeast powder on top, and then start the dough mixing process

When the dough is kneading for about 10 minutes, add softened butter

Continue kneading the dough for 30 minutes. When finished, the dough will reach the fully expanded stage

Cover the bucket with a wet drawer cloth and let it ferment at room temperature. You don't need to turn on the bread machine. Ferment the dough until it doubles in size. Just press it with your fingers and it won't rebound. If it is winter, you can use the fermentation function of the bread machine.

Take out the fermented dough and roll it into a long shape, then roll it up from one end

Place in bread pan. This toast is just a simple shaping, which is still equivalent to the one-click method. However, the weather is hot now, and the dough will overshoot if you use one-click method, so this semi-manual method is used. This makes it easy to control the degree of fermentation of the dough.

When the dough has risen to 2.5 times its size, brush the surface with egg wash

Turn on the baking function of the bread machine, the time is 40 minutes, and choose the light color when burning. I booked 50 minutes and it only took 40 minutes.
