Sweet wine, longan and eggs
Overview
There is no heating in the winter in the south, so the choice of ingredients tends to be warm, hot, and spicy to help the body ward off the cold. The glutinous rice is called sweet wine in the south. Every year after November, every household will brew the glutinous rice and wait for 3-5 days for the glutinous rice to be ready. In the morning, they will cook a bowl of glutinous rice soup, add longan, glutinous rice dumplings, and an egg to warm the head to the toes.

Steps
-
Add an appropriate amount of cold water to the glutinous rice flour, about 50 grams
-
When adding water, do not pour it all at once. Stir evenly while adding water so that the glutinous rice flour becomes flocculent
-
Add cold water to the pot and heat over low heat. Use your hands to roll the moist glutinous rice flour into glutinous rice balls and put them into the pot
-
When the glutinous rice dumplings are all rolled, turn up the heat and bring to a boil. When the glutinous rice dumplings float on the water, they are ready. Add the washed longan meat
-
Then pour in the fermented glutinous rice and stir gently evenly
-
Beat the eggs and pour them into the pot along the edge, and let it boil for 20 seconds
-
While the gravy is ready, pour it into the pot, stir evenly, and remove from the heat (if you like it sweet, add some honey)
