Soak the shredded potatoes in water and drain, cut the luncheon meat into strips, shred the ginger, and mince the garlic

Heat the pan, add oil, slightly heat the ginger and garlic and sauté until fragrant, leave some minced garlic, and use it before serving

For luncheon meat, add thirteen spices and stir-fry until fragrant

Dish out and set aside

Add some more oil to the pot, turn to medium-high heat, drain the water and shred the potatoes, stir-fry constantly

Pour cooking wine or hot water to help ripen and prevent the pot from sticking

After adding water twice and it is almost cooked, add the fried luncheon meat strips

Before serving, sprinkle balsamic vinegar along the edge of the pan and cook until fragrant. Add remaining minced garlic, sprinkle in chicken essence, stir-fry and serve.
