Wash the chicken wings, marinate them with onions, ginger, garlic, cooking wine, soy sauce, and salt. Knead them with your hands and mix well. Place them on a plate, skin side down, cover with plastic wrap and refrigerate for 5 hours

Add more oil in the pot than usual for stir-frying. Use high heat, slide in the chicken wings and stir-fry frequently until the color of the chicken wings turns darker all over. Add all the oil in the pot and add the seasoning sauce (soy sauce, sugar, salt, garlic juice), cover and simmer for about three minutes to reduce the sauce

There is no need to add water in this process. When frying the wings, they need to be fried thoroughly. The juice in the later stage can be less. If you are afraid that the time is short, you can add more juice in the later stage. Then add less salt to prevent it from being too salty
