Fei Nanxue
Overview
The preparation of Fei Nanxue is not time-consuming. Cook it until it is burnt and add almond powder. The taste has a light sweetness and a full and earthy feeling. It is rich and mellow, but the calories are a bit high. I paired it with bayberry juice and it was just right.

Grease the mold with a thin layer of butter in advance.

Put egg whites, powdered sugar and honey in a mixing bowl.

Stir until the powdered sugar melts, then use a hand mixer to beat until it reaches the stage of coarse foam.

Sift in cake flour and almond flour.

Mix until even and there are no flour particles.

Prepare a small pot and add butter.

Heat the butter over medium-low heat until it turns brown, then turn off the heat and filter out the impurities in the butter.

When the butter is still warm, pour it into the batter.

Cut and mix evenly.

Put the batter into a disposable piping bag.

Squeeze it into the Financier mold and gently shake the air bubbles.

Place in a preheated oven at 185 degrees for about 15 minutes (please adjust the temperature and time according to the actual temperature of your oven)

After taking it out of the oven, turn it upside down and release it easily.
