Meat dregs and scallion pancake
Overview
I usually like to eat scallion pancakes. When I first saw this recipe, I immediately wanted to try it. It was really crispy and delicious. The original recipe used pork belly, but I used ordinary minced meat, which is not greasy at all. I also added the sesame and pepper salt powder left over from making sesame seeds before. It is so delicious

Knead the flour with half boiling water and half cold water into a relatively soft and smooth dough, cover it with a damp cloth and let it rest for 30 minutes

Pork diced or minced

Put oil in the pot, fry the minced meat until golden brown, fry out the oil, and scoop out the meat residue and lard respectively

Add salt, green onions, sesame and salt and pepper powder to the meat residue (mix sesame powder and salt and pepper powder evenly)

Divide the dough into 4 parts, roll one part into a square, and spread it with lard

Sprinkle with meat scraps

Cut two knives on top and bottom

Wrap the bottom left and right sides towards the middle

Turn it over and wrap it up on the left and right sides

Flip it over again, wrap up the remaining two sides, and let it rest for 10 minutes
