Prepare the ingredients, peel the eggplant, wash and cut into thin slices.

Put the flour into a clean basin, add water to mix, then add an egg and mix well. Sprinkle some salt to taste.

Put some vegetable oil in the pot. When the oil is 50% hot, put an eggplant slice into the batter, and then put it into the pot with chopsticks. Just put them one by one.
