  1. Wash the kelp, cut into strips or cubes and set aside (shredded kelp is also available on the market)

  2. Soak mung beans in water for an hour

  3. Wash and cut the tangerine peel into cubes/strips

  4. Pour half of the water into the soup pot, add mung beans, kelp and tangerine peel and bring to a boil. Turn to low heat, cover the pot and simmer for two hours

  5. Add rock sugar and simmer for another twenty minutes. (The above ingredients are for 1 person, if there are more than one person, add according to the amount)
