Overview
Dictyophora is a relatively rare ingredient. It is nutritious and delicious. It goes well with winter melon and ribs. It is a delicious soup to relieve the heat in summer. My experience in cooking bamboo fungus: it only needs to be soaked for ten minutes, not too long. Just boil it for a few minutes. Soaking or boiling it for too long will cause it to rot and lose its flavor. The umbrella of bamboo fungus is too strong, so you need to remove the umbrella and roots when cooking

Cut the ribs into pieces, add them to the pot when the water is almost boiling, add a few slices of ginger and a few drops of cooking wine or white wine to remove the smell, turn it white and scoop it up

Cut winter melon into cubes

Put a pot of water, put in the ribs and ginger slices, add a few drops of white wine or cooking wine, cover and bring to a boil over high heat, then turn to low heat and simmer for 50 minutes

Add winter melon and cook over high heat for ten minutes
