Baby cabbage with ring oil
Overview
I learned from the TV show and made an improved and simplified version myself. The authentic ones are roasted Sichuan peppercorns and dried chili peppers, crushed into powder and then chopped into pieces. I directly used Sichuan peppercorn powder and oil chili peppers instead

One baby cabbage, cut in half, remove the stems and tear into strips by hand, wash and drain and set aside

Boil water in a pot and blanch the baby cabbage until soft

Drain the blanched baby cabbage and set aside

Put a little oil in the pot, add shredded green onion, shredded ginger and minced garlic and sauté until fragrant

Add appropriate amount of light soy sauce and stir-fry until fragrant

Stir-fry baby cabbage to release steam

Add appropriate amount of salt, sugar, rice vinegar, Sichuan pepper powder, oil chili and stir-fry until flavourful

Add a little water and bring to a boil

Collect the juice to thicken it. Do not collect all the juice, so that the baby cabbage will look better in color

Remove from the pot and put on a plate, make a hole in the middle and set aside

Add appropriate amount of pepper powder, oil chili pepper, and sprinkle with a little white sesame seeds

Heat a little oil in a pot and pour it into the baby cabbage hole. It will make a sizzling sound. This is the origin of the oil-squeaking baby cabbage
