Peanut Crispy
Overview
Made with the red-skinned peanuts grown by my grandma, it is very delicious. It is good to make some during the Chinese New Year or give it to others to eat yourself. It is so crispy and crispy that you can eat it yourself.

Mix corn oil with eggs and sugar together

Stir until emulsified

Sift in cornmeal

Mix well

Sift in the flour

Add baking soda and baking powder

Mix evenly to form a dough

Add chopped peanuts (because I used some leftover peanuts when I made matcha nougat, so it has a bit of a matcha powder color)

Knead it into dough and hold it together

Take a little dough, shape it into a ball and put it on a non-stick baking pan

Use the back of a spoon to gently flatten it until it looks like it will crack naturally

When everything is done, preheat the oven to 160℃ and bake for about 15 minutes until the surface turns slightly yellow

Take it out and let it cool before eating. If you make more, keep it in a sealed container
