Add water, scallions and ginger slices to the pot and bring to a boil. Add the whole chicken and cook for about 3 minutes, turning once in the middle;

Remove, wash and drain;

Add water, green onion segments, ginger slices, and a handful of knotted green onions;

Add the blanched whole chicken, cover and cook for 15 minutes, turn off the heat and simmer for 5 minutes;

Take it out and let it cool slightly, brush a layer of sesame oil on the surface of the chicken (I forgot to take a photo at this step), shred it and place it on a plate, garnished with coriander;

Light soy sauce, steamed fish and black bean sauce, add a little sesame oil and mix thoroughly for dipping (if you like spicy food, add a spoonful of chili oil for more flavor);
