Cut the eel into sections, add salt, cooking wine and ginger and marinate for half an hour

Pour oil, heat over medium heat, add eel to pan, fry on both sides until golden brown, remove from pan

Pour a little oil, add ginger, green onion and garlic and sauté until fragrant

Pour in cooking wine, light soy sauce, dark soy sauce, sugar and water

Cook the eel for 10 minutes
