Clean and drain the river prawns and set aside.

Add more cooking oil to the pot, heat over high heat until green smoke comes out, add the river prawns and stir-fry.

Stir-fry until the water is slightly dry, add salt and chicken essence, and continue to stir-fry.

Fry until the water is gone and the shrimp shells are browned.
