Hot and sour baby cabbage
Overview
Baby cabbage is a small, pocket-sized cabbage that is rich in carotene, vitamin C, etc. Baby cabbage is among the best in dietary therapeutic effects among vegetables, and even meat and eggs cannot compare with it. It is a new vegetable variety introduced from Japan and has become popular in China in recent years. The appearance is the same as Chinese cabbage, but the size is only one-quarter to one-fifth of Chinese cabbage. It is similar to a simulated miniature version of Chinese cabbage, so it may be called baby cabbage. Compared with Chinese cabbage, I prefer baby cabbage. It is sweeter and more tender, has a better taste, and has a variety of cooking methods. Today’s baby dish is very simple. It only stir-fries minced garlic and dried chili peppers, and adds a little vinegar to enhance the flavor. It is delicious with a bit of sourness and heat, tender and crispy, and has a very good taste

Steps
-
The ingredients are very simple: two small pieces of baby cabbage, four cloves of garlic, and a few dried chili peppers
-
Remove the baby cabbage leaves, clean them, and cut them into even slices with a razor blade. Peel, wash, and mince the garlic. Wash and remove the stems of the dried chili peppers and cut them into chili rings
-
Heat the pan with cold oil, add minced garlic and chili and stir-fry
-
Add baby cabbage and stir-fry over high heat
-
Add a little sugar for freshness
-
Add appropriate amount of light soy sauce and stir-fry evenly
-
Drizzle a little balsamic vinegar along the edge of the pot and stir-fry evenly
-
Taste for saltiness and add a little salt as appropriate
-
Just add a little chicken essence before serving. I like baby cabbage to be crispy and tender, so I fry it quickly over high heat. For those who like it soft and chewy, you can add light soy sauce and then add some bottled water to simmer it for a while.
