Wash the spinach and drain it into warm boiled water. (Cool water in summer, warmer water in winter is better.)

Squeeze out the water from the spinach and chop into small pieces.

Place in a bowl, add salt and sesame oil and mix well.

Prepare cooked eggs and salad dressing. The salad dressing already tastes good. It is recommended not to add too much salt, which will affect the taste.

Add the egg whites and chop into pieces, cut the yellow in half.

Place the marinated spinach into a small bowl or cup and mash.
