If you like potatoes, you may want to try this pancake, especially for children, because the addition of chopped green onion and soy sauce makes this pancake more fragrant. My kid actually ate four of them.

Boil the potatoes until soft.

While the potatoes are cooking, peel the carrots and dice them into small cubes.

Then blanch the peas and diced carrots, then cover with cold water and set aside.

Peel the soft boiled potatoes and mash them.

Then add the peas and diced carrots to the mashed potatoes, and add an appropriate amount of salt, soy sauce, chopped green onion, and flour (in fact, without adding flour, it is very fragrant to eat it directly after mixing).

Mix well to form a ball (continue adding flour if it's too thin).

Pour a small amount of corn oil into a non-stick pan, roll the mashed potatoes into small balls, then press them into small cakes and fry them in the pan over low heat.
