Dice onions, carrots, corn, and cucumbers and set aside.

Heat the oil in a pan, sauté the chopped green onions until fragrant, add the beaten egg liquid, stir-fry and set aside. Eggs and green onions are a perfect match. Stir the egg liquid after putting it in the pan, so that the scrambled eggs will be more tender.

Pour oil into the pot again, sauté garlic and onion, stir-fry for a while and then add carrots. The vitamin A in carrots is fat-soluble and is easier to absorb after frying with oil. Finally, add cucumbers and eggs, add soy sauce and salt and stir-fry until cooked, then add the leftover rice from lunch. I deliberately overcooked it at noon.
