Scallion oil noodles
Overview
I have known how to make scallion oil noodles for a long time, but I have never made it before. I always thought it would be very greasy. However, recently, people around me have been mentioning scallion oil noodles and making various recommendations, so I am particularly curious about what it tastes like! Today I made this noodles with diced pork, mushrooms and scallion oil according to my own taste. I didn’t expect it to be very fragrant, but I didn’t buy hand-made noodles today. I used dried noodles. It would definitely taste better if I used fresh noodles

First cut the green onions vertically into strips and then into sections crosswise

Pork belly diced

Soak the mushrooms and cut into cubes

Add vegetable oil (a little more) to the pot, add scallions and fry over low heat

Wait until the green onions have turned brown, take them out and set aside

Add the diced meat into the scallion oil and fry over medium heat

Then add diced mushrooms and fry

Wait until the diced pork and mushrooms are fried and dry

Add the fried scallions again

Add appropriate amount of salt and sugar to taste, then add a spoonful of oyster sauce, a spoonful of light soy sauce and dark soy sauce, stir well and turn off the heat

Just mix the scallion oil with the cooked noodles
