Steps
-
Crack the eggs into a bowl, add all the fine sugar at one time, put the egg bowl into a basin filled with hot water at about 60°C, beat at high speed until thick, then beat at low speed until the egg liquid is thick and fine. Lift the egg beater, and the dripping egg liquid can draw a figure of 8 and will not disappear easily.
-
Sift in the twice-sifted cake flour in two batches.
-
Stir evenly and shake gently a few times to remove large air bubbles.
-
Pour the cake batter into a 12-cup non-stick cake mold (four styles) and shake it lightly a few times to remove any large air bubbles. The amount of formula is perfect for this mold and just enough to use up.
-
Preheat the oven to 160° and bake on the middle rack for 25 minutes.
-
Take the baked cake out of the oven immediately.
-
Unmold the cake, place on a non-stick cooling rack, and set aside to cool.
-
Put the chocolate coins into a piping bag and melt in water.
-
Pour the chocolate onto the cake, sprinkle with sugar beads while it's hot, and serve after the chocolate cools and solidifies.
