Unknowingly, it is the season of fragrant osmanthus again. The osmanthus in the school seems to be in full bloom overnight, and the campus is filled with sweet smell. The unique fragrance of osmanthus floats around the body, penetrates into the nose, and is intoxicating. However, in the eyes of foodies, the golden osmanthus trees turned into delicacies, making people salivate. What delicious food can be made with osmanthus? There are so many: sweet-scented osmanthus cake, sweet-scented sweet-scented osmanthus rice dumplings, sweet-scented osmanthus wine, sugar-sweet osmanthus... There are so many sweet-scented osmanthus delicacies, among which the most widely used and longest-preserved one is undoubtedly the sweet-scented osmanthus. Sugar osmanthus is made by pickling fresh osmanthus with white sugar. Due to the high antiseptic properties of white sugar, it can be stored for a long time. A spoonful of it is poured into various Chinese desserts and the aroma is fragrant. There is also a method called osmanthus honey, which is pickled with honey. Its function is similar to sugar osmanthus. The nutrition may be slightly better, but the aroma is mixed, because honey originally comes from flowers and has a different floral fragrance. I have made salted cherry blossoms and honey-pickled cherry blossoms before, but the results were not very satisfactory, so this time I decided to use the method of boiling syrup to make this sugared osmanthus.

Pick the sweet-scented osmanthus when it first blooms. It is best to wear latex gloves when picking to prevent the petals from turning black due to the warmth of your hands. I just improvised and jumped right into it.

Pick out flower stalks and impurities.

Pour into clean water (except for the formula) and wash. Add a little salt when washing to sterilize and remove bugs. Soak for 10 minutes.

Pick it up and drain it, then spread it on gauze to absorb the water. I put a thick piece of toilet paper under the gauze to help absorb the water.

Mix white sugar and water, stir to accelerate dissolution, and make most of the sugar dissolve.

Cook the syrup. I used a rice cooker to cook it until big bubbles form as shown in the picture. The video was taken at night, so the light was not very good.

Pour the petals into the syrup, boil it and then boil it until it bubbles, then bottle it. The bottle must be scalded with boiling water to sterilize and dried.

The osmanthus syrup is ready, seal and refrigerate after cooling.
