Slice the ginger, cut the green onion into sections, and set aside.

Remove the gills and internal organs from the small yellow croaker, wash it, add a small amount of rice wine, white pepper, ginger, green onion, and a small amount of salt and marinate for 5 to 10 minutes.

After marinating, cover both sides of the fish body with dry flour.

Add oil to the pot and when the heat reaches 60%, add the fish.

Fry until golden brown and take out.

There is a little oil left in the pot. After the oil is hot, add a small amount of chopped green onion. Saute until fragrant and add the fragrant sauce. There is no need to add salt later. Just use the saltiness in the sauce. If you have a strong taste, you can add salt by yourself.

After the sauce is cooked, add half a bowl of water. After the water boils, add the fried small yellow croaker. Because the fish is already fried, cover it and simmer for 3 to 5 minutes. During the simmering process, you can add a small amount of sugar and light soy sauce.
