Spiced Pumpkin Rice

This is the season to eat pumpkin, so don’t throw away the pumpkin rice inside. Let it dry out for a while. It's great as a snack.

When we eat pumpkin, we have to express the pumpkin rice inside, and put it there every time. Wash well. Leave in the sun for a few days. Just dry it in the sun.

My pumpkin rice is relatively dry after being dried for about three days, so it can be fried.

Put nothing in the pot, add pumpkin rice and stir-fry slowly over low heat.

Add star anise.

Continue to stir-fry slowly over low heat.

The fried skin is slightly mushy. We add MSG, salt and pepper. Allspice.

Sprinkle with peppercorns and stir-fry over high heat to add more flavor.

Let it cool and eat it. It is crispy and delicious.
