Wash the whole chicken, wash the carrots and mushrooms and cut them into required sizes. (Here I used small mushrooms and mini carrots without cutting them)

Add cold water to the pot, add chicken, ginger skin and a little cooking wine and bring to a boil, skim off any blood foam.

Reduce heat to low and simmer for about 3 hours. Cook until the chicken is crispy.

Add carrots and mushrooms in the last 30 minutes, add soaked wolfberry before serving, and add appropriate amount of salt to taste.
