Cut potatoes, carrots, and coriander into shreds, and mince garlic. Soak the shredded potatoes in water to remove the starch and make them crispier.

Heat oil in a pan, add minced pepper and garlic and sauté until fragrant

Add dried chili peppers, shredded potatoes and carrots and stir-fry. Stir-fry the shredded potatoes until soft. Add salt, chicken essence and vinegar and stir-fry

Add coriander, add sesame oil and serve. The stir-frying process only takes two or three minutes, and the fried potato shreds are sour, spicy and crispy.
