Wash the fish and cut the back into two slices, and slice the tofu.

Pour oil into the pan, add ginger and fry the fish until both sides are golden brown.

Then add boiling water, pour in rice wine, and cook over low heat for fifteen minutes.

Add tofu, season, add salt and five-spice powder and cook for another fifteen minutes, then sprinkle with chopped green onion and dried chili pepper and simmer for another minute.

A very white fish stock would be fine.
