Don’t open the vegetables, wash them

Leave it in the sun for half a day to control the moisture, and it will be flooded

Put it on a plate, add an appropriate amount of salt and rub it in, about 15 grams per kilogram of vegetables.

Leave it for 1 to 2 hours. You will see that the salt has melted and water begins to appear on the surface

Find a clean, water-free, oil-free container with a lid, put it in, and pour in enough cold boiled water. It must be cold and cover the vegetable noodles

After soaking for 15 days, you can open the lid. If you can’t finish it at one time, you can put it in the refrigerator. I make pickled fish, or stir-fry 1 to 2 millet peppers
