Potatoes have always been my favorite ingredient; I didn’t have much at home when I was a kid, so my mom and dad would grow a lot every year and eat them in various ways, including steaming, boiling, and roasting. Today, I fried rice with shredded potatoes, which is also delicious; it’s sour and spicy, and it suits the taste;

Peel potatoes, cut into shreds, soak in water to remove excess starch;

Heat oil in a pan, add red pepper and garlic, stir-fry;

Add shredded potatoes and stir-fry;

Add a small spoonful of white vinegar and continue to stir-fry;

Don’t use too many shredded potatoes for fried rice. The excess can be put on other plates and set aside;

Add the leftover rice. If you feel the leftover rice is a bit hard, you can pour a small spoonful of water into it and simmer it until it becomes very soft;

Crush the rice, stir-fry evenly, add a small spoonful of salt, and stir evenly;

Add the green onions and it’s ready to serve;
