Braised Pork Ribs Noodles

As a southerner, I usually prefer rice as my staple food, but flour and rice each have their own nutrients. For the sake of health, you should increase your pasta intake to achieve a balanced diet!

Add salt, eggs and water to the flour and knead it into a smooth dough, cover it with plastic wrap and let it sit for 15 minutes to make hand-rolled dough.

Soak Sichuan peppercorns in hot water for 10 minutes. Wash and cut lettuce, mushrooms, potatoes and peppers into pieces.

Chop the short ribs into small pieces, heat the oil in the pot, sauté the ginger slices, add the ribs and stir-fry together. After the ribs change color, add cooking wine and braised soy sauce, stir-fry well, add water, cover the pot and simmer for about 30 minutes.

Add lettuce, mushrooms, potatoes and peppers, add salt and water and continue to simmer.

After the vegetables in the pot are cooked, spread the hand-rolled dough on top of the vegetables. Cover and simmer for 5 minutes.

Add vinegar and MSG to the pepper water and mix thoroughly, pour into the noodles, stir-fry evenly, and sprinkle with scallions.
