Crucian carp tofu soup
Overview
I originally planned to make casserole tofu today, but I happened to see a store selling fresh crucian carp at a very cheap price, so I decided to make this crucian carp tofu soup on the spur of the moment. One crucian carp and one box of tofu should be enough for a family of three.

Wash and dry the crucian carp, and make two cuts in the thick part of the meat.

Chop the chives and coriander into small pieces, and cut the tofu into small pieces with a knife in the box.

Fry the crucian carp and ginger slices in a little oil until the fish body is slightly browned.

Add enough water to add the green onions and bring to a boil.

Simmer until the soup turns white.

Add the tofu cubes and continue simmering.

The soup should be boiled until it is milky white. Remove the ginger slices and scallion segments, season with salt and appropriate amount of pepper, and sprinkle with chopped scallions and coriander.
