Overview

I have made mango layer cake many times, especially for afternoon tea in the hot summer. I cut it into a small piece. The rich mango flavor is sandwiched with smooth cream, and the thin crust is refreshing and not greasy. I think the crust made with this amount of powder and butter has the best taste.

  1. First mix the eggs with milk and sugar, then pour in the cake flour (you don’t need to sift the cake flour). After stirring thoroughly, sift the egg batter twice, as shown in the picture. It should be fine and grain-free. Then pour in the butter that has softened into liquid. Stir evenly, cover it with plastic wrap and put it in the refrigerator for 30 minutes.

  2. In an 8-inch non-stick pan (especially for making layer cakes), add two spoons of refrigerated egg batter, spread it evenly and thinly over the bottom of the pan, set it to the lowest heat, and fry until there is a big puff in the middle, then flip it over.

  3. Flip and cook the other side until there are big bubbles in the middle and the entire crust is done.

  4. Fold all the pie crusts one after another and stack them up.

  5. Wrap the baked pie crust with plastic wrap and refrigerate for 40 minutes.

  6. Take an appropriate amount of mango, peel it and cut the mango flesh into small pieces for later use.

  7. Prepare whipped cream.

  8. Fill a stainless steel basin with water and add an ice pack.

  9. Place the container of whipping cream on top of the ice pack.

  10. Add 40 grams of white sugar to the whipped cream several times and beat.

  12. Take out the chilled pie crust from the refrigerator, cut the mango into cubes and set aside.

  13. Put the whipped cream into a plastic bag, cut a hole, squeeze the whipped cream on a piece of pie crust, and sprinkle some mango.

  14. Press each piece of pie crust lightly so that the lower layer of butter will be spread evenly.

  15. After all the pie crusts are laid out, wrap in plastic wrap and refrigerate for 1 hour.
