  1. Put the clam in salt water and let it sit for 2 hours to spit out the sediment

  2. Beat the eggs, add 150g water and mix well

  3. Add salt and pepper

  4. Bring water to a boil in a pot, add shredded ginger and cooking wine, add clams, blanch until they open and take them out immediately

  5. Rinse off the sand and scum and place in a bowl

  6. Strain the egg liquid into the clam bowl

  7. Cover with plastic wrap and poke a few small holes with a toothpick

  8. Place in a steamer and steam over high heat for about 15 minutes

  9. After 15 minutes, do not open the lid and leave to simmer for 5 or 6 minutes

  10. Then pour some sesame oil and sprinkle with chopped green onion~~You can also drizzle some soy sauce if you like~
