In a pot of cold water, add a slice of ginger and a little cooking wine and bring to a boil. The clams will splash into the water until they open and the water will come out immediately.

Peel the clams and remove the meat for later use

Wash and drain the phoenix mushrooms and set aside

Dice the colored peppers and cut the leeks into small pieces and set aside

In a pot, add a little oil to the star anise and ginger slices and sauté until fragrant, add the phoenix tail mushrooms, stir-fry for a few times, add the seasoning light soy sauce, use oil, a little sugar and salt, add the clam meat and stir-fry evenly, add the diced bell peppers and leek segments, stir-fry evenly and thicken with water starch, and serve.
