Downstairs from the office, there is an old man who lives nearby and sells kudzu there almost every day. It is very glutinous and delicious in soup or stew.

  1. Peel the kudzu and cut into pieces. Rinse it with water after cutting it. There won't be so much starch and the soup will clear up.

  2. Prepare some slices of ginger.

  3. Boil a pot of water. When the water boils, put the bones in and cook them until they form foam. I had chicken bones and pork bones. These pieces of chicken were chopped by my old man. He didn’t distinguish between meat and bones. When I chop them, I usually keep the part with more bones for stew.

  4. Remove the cooked bones and put them in the soup pot. A bit less 😁

  6. Add kudzu and ginger, bring to a boil over high heat and then simmer over low heat.

  7. It simmered slowly over low heat. During the process, I looked in the cupboard and saw red dates, so I put a few on the spur of the moment.

  8. When the soup is almost simmered, add salt to taste, and nothing else is needed. The key is that the bones are rotten, but the pink kudzu doesn't matter.
