Peel and wash winter bamboo shoots

Cut into thin slices

Crush the garlic, clean and shred the sour pickles. Slice the lean meat and marinate with some oil, salt and light soy sauce for later use

Heat oil in a pan, add garlic and lean meat, set aside when cooked

Add the sauerkraut and bamboo shoot slices to the hot pan and stir-fry until golden brown. Add salt, oyster sauce and a little water and simmer for seven or eight minutes. Finally add medium rare lean meat.
