  2. Remove the skin from it, slice it, and cut it in the middle.

  3. Wash the chicken wings, and I like to score both sides with a knife. I feel like this can remove the blood inside and make it taste better. Then marinate with a little salt, a little vinegar and a spoonful of light soy sauce for five minutes.

Heat the pan, add oil, sprinkle with minced ginger when the oil is hot, then use chopsticks to pick up the chicken wings and put them in the pan, stir-fry until the chicken skin is yellow and add dark soy sauce, stir-fry until the chicken skin is cooked, pour boiling water, just enough to cover the chicken wings, sprinkle with salt when the water is half boiled
