Wash the straw mushrooms.

Rinse the oysters with running water and cut the straw mushrooms in half.

Heat oil in a pan, add ginger, garlic, and chives and stir-fry until fragrant.

Add the shrimps and stir-fry. Immediately add a little stock and cook briefly to release the oysters. Add oil to taste, reduce the sauce over high heat and serve. (This dish is all about its freshness. A little oil is enough, and there is no need to add any seasonings.)
