  15. Bring to a boil over high heat, cover, and simmer over medium heat for 15 minutes

  16. Taste the potatoes and carrots and cook them until soft

  17. Turn off the heat (Japanese friends say this is the key, the curry will stick to the bottom of the pot if you don't turn off the heat) and add the curry cubes

  18. Stir gently until the curry is fully melted

  19. Turn to low heat and simmer for about 5 minutes until thickened
