Japanese curry chicken rice

A Japanese housewife friend taught me how to cook home-style Japanese curry rice. It is simple to make and has a mellow taste. It is deeply loved by my children😋. Japanese curry rice is a Japanese dish that is eaten with rice and Japanese curry sauce. Japanese curry has a smooth, thick and sweet taste. Japanese curry rice, which is paired with white rice, is not only among the most popular food types in school lunches served in primary and secondary schools in Japan, it is also often called the national food and is very popular in Japan.

Use a rice cooker to cook rice for 2~3 people🍚, defrost 300g of chicken breast in advance

Prepare ingredients and Japanese curry

Cut chicken breast into 1.5cm pieces and set aside

Peel and cut potatoes into cubes

Shred onions, dice carrots, cut mushrooms into thick slices, and slice garlic cloves and set aside

Take out 4 pieces of curry and set aside

Pour vegetable oil into a hot pan, just enough oil to fry a plate of vegetables

When the oil is hot, add onions and garlic slices

Stir-fry over high heat until golden

Pour in chicken pieces

Stir-fry over high heat until the surface of the chicken pieces turns white

Pour in all the vegetables

Stir fry over high heat for about 5 minutes

Pour 950ml water

Bring to a boil over high heat, cover, and simmer over medium heat for 15 minutes

Taste the potatoes and carrots and cook them until soft

Turn off the heat (Japanese friends say this is the key, the curry will stick to the bottom of the pot if you don't turn off the heat) and add the curry cubes

Stir gently until the curry is fully melted

Turn to low heat and simmer for about 5 minutes until thickened

Plate rice and top with curry
