Cut potatoes into thin strips, wash with water to remove starch and soak for later use

Chop onion, ginger, garlic and chili

Add water to the pot and bring to a boil, add shredded potatoes and blanch them

Pour the blanched potato shreds in cold water to drain and set aside for later use

Heat the pan with cold oil, add chopped chili and stir-fry until red, then add onion, ginger and garlic and stir-fry until fragrant, add cooking wine, salt, vinegar and chicken essence and stir-fry until fragrant
