Prepare all ingredients

Dice carrots and cucumbers; peel corn; crack eggs (you can use a little more egg yolk as appropriate)

Heat the oil and fry the carrots until they are about half cooked. Add the corn kernels and diced cucumbers and stir-fry.

Add rice and salt and stir well.

Beat the eggs and strain

Apply a layer of oil on the pan, pour in the egg liquid when the oil is hot, and turn the pan to spread the egg liquid evenly.
