Prepare materials.

Egg yolks plus sugar.

Beat for 1-2 minutes until the color becomes lighter.

Heat the whipped cream over low heat until small bubbles appear on the edges, then remove from the heat.

Slowly pour into the egg mixture while stirring.

Pour into the roasting pan, use the water bath method, and add boiling water.

Put it in the oven and bake at 150 degrees for 30-40 minutes, take it out to cool, and refrigerate it for about 4 hours.

Sprinkle a layer of fine sugar on the surface and caramelize it with a kitchen blowtorch.
