Gouqi Wonton
Overview
Wonton, also known as wonton, is one of the traditional snacks that Lao Guang remembers deeply. It originated from Guangzhou and belongs to Cantonese cuisine. Usually wontons are used to mix noodles, which are divided into soup noodles and lo mein. This time I made only wolfberry and wontons without adding noodles.

Preparation materials: Pork stuffing, dried shrimps (soak the dried shrimps in warm water until soft), carrots (chopped), pickled mustard (chopped)

Add dried shrimps, chopped carrots, mustard seeds, salt, sugar, pepper, oyster sauce, and cornstarch to the meat filling, stir evenly; use chopsticks to stir the mixed meat filling in the same direction to make gluten;

Prepare the wolfberry leaves and wonton skin;

Then take a piece of wonton skin and put it in the palm of your hand;

Place an appropriate amount of meat filling on 1/3 of the wonton skin, wrap it up as shown in the picture, and stick it tightly;

After the water in the soup pot boils, put the wrapped wontons in;

Remove branches from the wolfberry leaves and wash them;

Stir well with a slotted spoon to prevent it from sticking to the bottom. Add peanut oil, salt and pepper to taste. Keep the heat on medium. After the soup boils, pour in about 100ml of cold water. Continue to cook until it boils and pour in cold water again. Add cold water at least 2-3 times;

Add the washed wolfberry leaves and blanch them together until the wonton skin becomes transparent and soft and ready to be cooked;
