Cut butter into small pieces and soften at room temperature.

Beat it with a whisk for 1-2 minutes until the texture is smooth and even.

Add sugar and beat until color becomes lighter and volume increases.

Add the egg liquid in three batches and mix well.

Sift in the low-gluten flour, use a rubber spatula to mix the flour and butter thoroughly, put it in a plastic bag and refrigerate for about 20 minutes.

Roll the chilled dough into a cylinder with your hands.

Wrap it in parchment paper and freeze for 1 hour.

Take out the frozen dough and slice it.

Use a brush to brush a small amount of egg white on the surface and sprinkle a small amount of sugar

Preheat the oven to 180 degrees, set the middle rack, and bake for 15 minutes until the center is slightly brown and the sides are baked.
