Mid-Autumn Mooncake Filling-Red Bean Filling
Overview
On a whim, I soaked the red beans and made some red bean filling. Maybe it was because I used a wall-breaking machine. The bean paste was beaten very finely and I was very satisfied with the finished product. Thinking about it, this year's Mid-Autumn Mooncakes will definitely taste better than last year's! Of course, red bean filling can not only be used to make mooncakes, but can also be used to make lasagna or bread! The current weather in Liuzhou is on average 27 degrees to 35 degrees, so staying in the kitchen means baking on the stove, so I handed over the arduous task of frying bean paste to the bread machine and used the jam function of the bread machine to complete it! Although it will take a little longer, you don’t have to stand by the stove in the hot summer, and you can also be distracted and do other things. Those who have a bread machine can also try making it. If you don’t have a bread machine, just fry it yourself!

Steps
-
Prepare the ingredients. The red beans should be soaked in water for a day in advance. During this period, the water should be changed two or three times to prevent the high temperature from deteriorating the red beans;
-
Add an appropriate amount of water to the soaked red beans in a pot and bring to a boil. Simmer over low heat for half an hour until soft (because they have been soaked for a long time, they will be completely rotten after half an hour)
-
Take out the cooked beans and pour them into the breaker, with only a little water used to cook the beans, and use a cooking stick to help beat until smooth
-
The beaten red bean paste is very delicate
-
Pour the red bean paste into the bread bucket. You can pour all the oil and sugar in, or pour half of the oil and sugar first, and then add according to your own taste. Put the bread bucket into the bread machine and select the jam program
-
It took about one and a half programs, more than an hour. When the machine stopped stirring for the last 20 minutes of a program, I ended the program and started the jam program again. I didn’t have to wait for the end of the second program to see if the bean paste could be completely balled up with a non-stick spoon. Remember to use a silicone spatula to stir it to prevent the bread machine from idling!
